04: Jose Maria Goñi Martínez, 6th-7th February 2024

Barrafina and popular restaurant booking platform, Resy, are proud to announce Jose Maria Goñi Martínez of Madrid’s Michelin-starred El Club Allard as the fourth guest chef in the quarterly series.

Barrafina Invita sees Barrafina’s Executive Chefs, Antonio Gonzales Milla and Francisco Jose Torrico, invite the best Spanish chefs or chefs cooking Spanish food, over to cook a special menu for two nights at Barrafina Borough Yards. The series aims to showcase the breadth and quality of Spanish cooking from all over Spain and the rest of the world.

Tucked away in the historic Casa Gallardo, a magnificent Art Nouveau building located in a corner of the Plaza de España, El Club Allard first opened its doors to the public over twenty years ago. Since then, it has become one of Madrid’s most celebrated restaurants – awarded two Michelin stars under previous head chefs Diego Guerrero, and subsequently, María Marte, before closing during the pandemic.

Re-opening in 2023 under the expert guidance of legendary chef Martín Berasategui, with head chef Goñi Martínez at the helm, El Club Allard regained its Michelin star – marking a new chapter in the restaurant’s storied past.

Goñi Martínez’s culinary career began at the prestigious Basque Culinary Center, where he trained under Berasategui, widely considered as one of the best chefs in the world – boasting twelve Michelin stars in his name, the highest number of any Spanish chef. The first of his prestigious stages was at Berasategui’s eponymous three-Michelin restaurant in Lasarte-Oria, followed by a stint at his equally decorated Barcelona restaurant, Lasarte. Since completing his studies, Goñi Martínez has worked internationally at acclaimed restaurants Locavore (Bali) and Amelia (Donastia) and has consulted for Gastromaquia (Jakarta).

Goñi Martínez’s cooking incorporates influences from East Asia while embodying Berasategui’s unique vision of gastronomy, in which exceptional ingredients are treated with profound respect and technical precision.

Joining Goñi Martínez to cook for the two nights is his Sous Chef, Nicolas Iribar Lopez, who previously worked at Barrafina Adelaide Street.

Jose Maria Goñi Martínez will be cooking a special set menu at Barrafina Borough Yards on the evenings of 6th and 7th February.

The experience is priced at £85 and includes a set menu. Drinks and service not included.
