Our friends Andrea and Laura at @masafina.masafina produce traditional flour tortillas from regeneratively grown British wheat.
 
Wheat tortillas are a staple in northern Mexico, particularly in Chihuahua, Sonora and Sinaloa. Their lighter flavour compared to corn tacos makes them for our Baja fish tacos.

Raising a glass to pulque, the lesser known relative of mezcal and tequila. Made from fermented agave, it is believed to have been first made over 2,000 years ago and is recorded in Mayan glyphs. The cloudy drink has an effervescent quality and a deceptively low alcohol content. Served up in pulquerias, especially across Mexico City, it is also known as the Drink of the Gods.

Today marks the Día de Independencia in Mexico, when the country made its first official bid for freedom from the Spanish crown. This was rung in by the Catholic priest, Miguel Hidalgo y Costilla in what is known as ‘El Grito de Independencia’, or the Cry of Dolores in 1810.

It would take another decade of war before Mexico officially achieved its independence on 28 September 1821. But 16 September remains a key date in the Mexican almanac as a national holiday. The day is marked with street parties, parades and traditional folkloric music. Bring on the margaritas!
Huevos Rancheros are a staple of Mexican breakfast. The name derives from the dish’s origins on ranches across rural Mexico where workmen would need sustenance after an early morning’s work. Fried eggs are served over tortillas with a spicy salsa for a little kick.

Is there any better way to start a meal than with guacamole and totopos? We would venture that the response is a no, especially when paired with our salsas. 

These are an ode to the striking array of Mexican chillies. 

They add an extra kick, with a level of sliding scale. From the Morita made with chipotle and braised tomato and the Verde Fresca with Serrano chillies to the Del Vic with the force of charred habanero. Don’t say we didn’t warn you.
