La Temporada de La Matanza
at Parrillan Borough Yards
Parrillan, which celebrates Spanish cooking over fire, hosted its third ticketed event series at its Borough Yards location in London Bridge. La Temporada, which translates to “the season”, celebrates key seasonal ingredients from the Spanish culinary calendar, expertly cooked over flames at the heart of the restaurant.
On Tuesday 11th November, Parrillan will mark the Fiesta de la Matanza, a cherished rural Spanish tradition honouring the pig and all the artisanal products it provides, and a wonderful excuse for a community feast.
November has always been a defining month across the Spanish countryside, marking the start of the pork-curing season. It is the time when chorizo, jamón and salchichón, cornerstones of Spanish cuisine, are carefully prepared and preserved. Beyond mere practicality, La Matanza has evolved into a communal celebration where families, friends and neighbours work side by side, turning the day into a feast of music, laughter and shared abundance.
Guests will be welcomed to enjoy a special set menu, priced at £70, designed to honour this unique Spanish tradition. Bookings will be hosted on long, communal tables and dishes served feasting-style, as is traditional.
