El Pastor to open El Siete
a new agave-forward cocktail bar in Soho
Harts Group is delighted to announce the opening of El Siete, a new agave-forward cocktail bar beneath El Pastor Soho on Brewer Street, launching in March 2026.
El Siete (‘The Seven’) pays homage to El Colmillo, the cult nightclub El Pastor’s co-founders Sam Hart and Crispin Somerville opened in Mexico City in the 1990s at 52 Versalles Street. The number 7, representing the sum of its street number, has been chosen for the bar’s name and iconography as a tribute to the place that first inspired our decade-long immersion in Mexico City’s music, design and nightlife.
The drinks programme is firmly rooted in agave culture, drawing on years spent in Mexican palenques, cantinas, and neighbourhood bars. El Siete will offer best-in-class margaritas, original agave-based cocktails and exceptional versions of classics – 7 options for each.
An enthusiastically and discerningly collected selection of sipping mezcales and tequilas will be available to order from the back bar, with table service throughout to keep the evening flowing seamlessly.
For those looking to snack, a short menu of mini tostadas made with El Pastor’s house-made heirloom corn tortillas will be available to order late into the night, along with our addictive El Pastor chile popcorn.
Located through a discreet entrance on Brewer Street, guests will descend into a low-lit, neon-inflected cocktail lounge designed by Macaulay Sinclair. The 60-cover space, previously home to Mezcaleria Colmillo, features a central horseshoe bar and low-slung banquettes and couches set around clusters of glass-topped cocktail tables.
In keeping with the spirit of El Pastor, El Siete will deliver a warm, fun and deliciously bewitching night out in the heart of Soho.
“It’s nearly thirty years since we opened Colmillo in Mexico City, a simple idea built on great cocktails, music we loved and a true sense of welcome,” says Crispin Somerville, Managing Director. “With El Siete, we come full circle, channelling that same spirit into the heart of Soho with an agave-led bar shaped by the Mexico City that has given us so many memorable times and lasting friendships.”
El Siete will open in March 2026 at 66-70 Brewer St, Soho, London W1F 9UP.
