Parrillan, which celebrates Spanish cooking over fire, will host the fourth edition of its ticketed La Temporada series at its Borough Yards restaurant in London Bridge. La Temporada, meaning “the season”, highlights key ingredients from the Spanish culinary calendar, cooked over open flames at the heart of the restaurant.

On Wednesday 4 February, Parrillan will turn its attention to cardo (cardoon) – a winter vegetable closely related to the artichoke and a cherished seasonal speciality in Navarra, northern Spain. While artichokes are prized for their fleshy leaves, it is the cardo’s stalks that take centre stage during the colder months, particularly at Christmas.

The ingredient holds special significance for the Barrafina Group team. Ignacio García Vicente, Senior Head Chef at Barrafina Adelaide Street, is from Corella in Navarra’s La Ribera region, where his family has cultivated cardo for generations alongside producing Martiniega olive oil, now used across Barrafina and Parrillan restaurants. The region’s hot summers and cold winters create ideal growing conditions for cardo, artichokes and borage.

Cardo cultivation is a slow, traditional process. Seeds are sown in May, transplanted in early summer and carefully tended until winter. During the colder months, red cardo is covered with soil – a time-honoured technique that softens the stalks, deepens their colour and results in a sweeter, more delicate flavour.

Guests will be invited to enjoy a £70 feasting-style menu, served on communal tables, created by Parrillan Executive Chef Francisco José Torrico. Both red and green cardo will feature throughout the menu, alongside artichokes, fire-cooked meats and an inventive dessert showcasing the vegetable’s versatility. A curated Spanish wine flight will also be available on the night.

La Temporada de Cardo will take place at Parrillan Borough Yards with two seatings at 6pm and 8.45pm.
