Parrillan, which celebrates Spanish cooking over fire, hosted its first ever ticketed event series at its Borough Yards location in London Bridge. ‘La Temporada’, which translates to ‘the season’, will celebrate key seasonal ingredients from the Spanish culinary calendar, expertly cooked over flames at the heart of the restaurant.

For this inaugural edition, calçots (sourced from Natoora) took centre stage in a menu devised by Barrafina Executive Chef Francisco Jose Torrico, inspired by Catalonia. The evening began with pan con tomate and escalivada on Catalan coca bread, followed by flame-grilled calçots with romesco. The feast continued with chargrilled butifarra and a white bean stew, wood-fired lamb ribs and tender rabbit with roasted mid potatoes. To finish, a sheep’s cheese mel i mató drizzled with honey.

Barrafina Group Wine Buyer, Rafa Martin, paired these dishes with wines from legendary Catalonian winemakers Mas D’en Gil.
